Tomatoes and young succulent squash to be sliced and bagged for the freezer. We'll keep a handful back to eat fresh in salads.
Strawberries, Damsons and Victorias will make a fine conserve.Once the fruit is washed, calyxes are picked off and plum stones removed. The fruit is then put to "sweat" in the sugar over night. It shortens the cooking time and helps to integrate the flavours.
